Bocuse d'Or 2021: France wins the gold medal

For the first test, Davy Tissot and his team offered a paleron stew with the accents of the terroir, with a champagne in champagne.On the theme of the Take Away, the chef presented a reconstituted tomato district based on tomato water fermentation and a confit tomato in the oven and the verbena as a starter;A stuffed tomato and shrimp inspired by a recipe from her grandmother on the dish;A tomato candy fermented in blackcurrant and prune -colored tomato skins for dessert.
