Cyril Lignac's advice for crisp and gourmet pig's feet

First we take a large saucepan of water where we put the feet of pig.First boiling, to remove impurities, we change the water.Then, we put an aromatic garnish: leeks, thyme, bay leaf, large onions, cloves and we cook your feet for 4 hours, because it must crumble.We then remove the first part of the skin, the outline.We press it very hard and we chop it with a knife and inside we put small pickles, shallots and a little parsley.We mix it all.
We put it in a brick sheet that we cook in the fryer.We have this crisp and soft side.Cyril Lignac recommends tasting these pig's feet with a lamb's lettuce salad and a sour sauce: crème fraîche, chives and lemon juice in which we dip our crispy pigfoot.
